Press Herald profiles UMaine food scientist Mary Ellen Camire
The Portland Press Herald published an interview with Mary Ellen Camire, director of the UMaine Sensory Evaluation Center and professor of food science and human nutrition. Camire’s research focuses on the relationships between consumers and Maine-specific food commodities, like seaweed, potatoes, berries and grains. The profile explored the arc of Camire career, from high protein, high-fiber Cheetos to invasive green crabs and sea vegetable to food processing by-products from wild blueberries and potato chips and fries.
